Butter Chicken Curry with Roti

 


This past weekend, made butter chicken curry for the very first time. I must say, from my friends and colleagues reaction, this was a winner! Below is a list of the ingredients and a quick prep tip.

 

Ingredients:
Shan Spices Butter Chicken mix
Plain yoghurt
Fresh Tomatoes
Fresh Cream
Onion
Coriander
Butter
1 kg Chicken Cubes
Heap of garlic
Lemon Juice
Roti (from my favourite spice shop) 

Quick Cooking Tip:
Cut chicken fillet into small cubes
Marinade chicken for 1-3 hours with Shan's butter chicken mix,
2/3 spoons of plain yogurt, heap of garlic and 2 spoons of lemon juice.
In hot pan, fry chicken in small amount of butter/oil for 3-5 minutes
In another pot boil tomatoes for 10 minutes.
Drain and remove skin from tomatoes
Blend tomatoe with half an onion (onion not essential)
Add tomatoe puree to the chicken pot
Cover and cook on low heat for about 15-20 minutes
Add butter and cook for additional 5 minutes
Add cream.
Stir and remove from heat.
Add coriander 
Serve hot :)
